Savory Vegetable Sauté

INGREDIENTS

  • 1 medium onion (red or yellow), chopped

  • 12 oz pack (about 2 cups) of frozen mixed vegetables or a variety of fresh vegetables (broccoli, Brussels sprouts, cabbage, and carrots), chopped

  • Chopped kale (3 leaves)

  • 2 garlic cloves

  • 1 tsp. Tamari sauce or low-sodium soy sauce

  • 1 tsp. sesame oil (optional)

  • ½ inch fresh ginger or ¼ tsp. ginger powder

 

DIRECTIONS

Sauté onion and garlic.

When the onion is translucent, add mixed vegetables and sauté for another 3 minutes or so.

Add kale and allow to steam down, about 3 minutes.

Add Tamari sauce. Stir vegetables to incorporate the sauce.

Add sesame oil and stir.

Sample the vegetables for taste and texture. Do not overcook. The vegetables should look vibrant, not bland.

Add ginger and stir to incorporate.

Tip: Add ginger after the vegetables are cooked, then stir to incorporate.  Taste and make adjustments as necessary.
