INGREDIENTS

2 bunches of curly kale (roughly 4 cups)

¼ teaspoon oil (olive or canola)

½ teaspoon Old Bay seasoning or your favorite spice blend

Sesame seeds - optional

Salt (optional).  Note - Old Bay has salt, so avoid adding additional salt.

DIRECTIONS

Preheat the oven to 350०F.  Line two baking sheets with parchment paper.

De-stem kale.  Chop into bite-size pieces.

Place kale in a large bowl.  Pour olive oil over kale leaves.  Massage the olive oil into the leaves with your hands.  Add Old Bay seasoning or your favorite spice blend.  Massage seasoning in.

Spread the kale on the two baking sheets.  Spread the leaves so they don’t touch each other.

Bake kale for 8 minutes.  Tap kale.  If it sounds hollow, it’s done.  If not, bake for another 2 minutes or more.

When kale is done, sprinkle with sesame seeds.  Alternatively, you can add sesame seeds with the spice blend and bake.
