Tomato & Spinach Saute

INGREDIENTS

  • 1 medium plum tomato, chopped (or 1 cup cherry/grape tomatoes sliced in half)

  • ½ medium onion (red or yellow), chopped

  • 2 garlic cloves, chopped

  • ¼ tsp. Adobo seasoning

  • A handful of baby spinach (or other leafy greens such as kale or Swiss Chard)

 

DIRECTIONS

Saute onions and garlic in a saucepan. 

When onions are translucent, add Adobo seasoning.  Saute for a minute or so.

Add baby spinach.  Place a cover over the saucepan until greens are wilted, roughly 3 minutes.  
Stir to combine and serve.
